Cheesy Crustless Quiche
Cheesy Crustless Quiche includes low-fat gouda/edam/cheddar/Swiss cheese, grilled chicken breast, low-fat mozzarella cheese, eggs, skimmed milk, oregano (optional), and cooking spray. The mixture is baked in a pie pan at 200°C (400°F) for 40 minutes until lightly browned. The quiche can be served immediately or refrigerated after cooling, and cooked vegetables such as tomatoes, onions, or green peppers can be added according to personal preference.
Ingredients
- 114 grams (approx. 4oz) cubed low fat gouda/edam/cheddar/Swiss cheese.
- 170 grams (approx. 6oz) grilled chicken breast, cut up into 1" cubes.
- 283 grams (approx. 10oz) shredded low fat mozzarella cheese.
- 3 large eggs
- 250 ml.(approx. 1 cup) skimmed milk.
- Oregano to season (if desired)
- Cooking spray
- 22 cm .(approx. 9") dish
Instructions
- Preheat oven to 200 C (400 F)
- Spraypie pan with cooking spray.
- Fill the pie pan with the cubed cheese and cubed chicken breast.
- Spread the shredded mozzarella cheese over the top of the entire mixture.
- Sprinkle the oregano on the top to taste.
- Ina separate bowl, whip together the eggs and skimmed milk. Pour over the chicken and cheese.
- Bake for 40 minutes (The top will be very lightly browned when finished).
- Let cool and serve immediately or cover with tinfoil and place in refrigerator.
- Feel free to add cooked vegetables to preferences (tomatoes, onions, green pepper).
