Asian Chicken Lettuce Wraps
This recipe is for Chicken Lettuce Wraps that are made with ground chicken, bamboo shoots, water chestnuts, and a mixture of sauces and spices. The chicken mixture is cooked with onions, garlic, and ginger before adding the bamboo shoot and water chestnut mixture. The mixture is then served on butter lettuce leaves and topped with chopped green onion and cucumber. The recipe yields 8 servings.
Ingredients
- 226 grams (approx 1 can / 8oz) bamboo shoots, drained and minced
- 226 grams waterchestnuts, drained and minced.
- 3 tablespoons sherry cooking wine
- 2 tablespoons hoisinsauce
- 1 tablespoons unsalted peanut butter
- 2 teaspoons low-sodiumsoy sauce
- 2 teaspoons hot pepper sauce, such as Sriracha
- 10 grams (approx. 40oz) sugar substitute (such as Splenda)
- 1 tablespoon mincedgarlic
- 250 grams (approx. 8.7oz) mincedonion
- 226 grams (approx.½ pound 8oz) mince/ground chicken breast
- 1 teaspoon minced ginger
- 1/4 teaspoon salt
- 1 teaspoon toastedsesame oil
- 8 leaves butter lettuce leaves should be small
- 1 whole spring onion, chopped
- 1 small cucumber, seeded and sliced into 2.5 cm (1”) strips
Instructions
- Ina medium bowl, combine the bamboo shoots, water chestnuts, sherry, hoisinsauce, peanut butter, soy sauce, hot-pepper sauce, and sugar substitute. Mixwell. Set aside.
- Mist a large, non-stick frying pan or skillet with cooking spray and set over medium heat.
- Add the onion and cook for 4 minutes or until onions are fragrant and softened.
- Add the garlic and cook for 1 minute.
- Increase the heat to medium-high and add the ground chicken, ginger, and salt. Cook for 3 to 4 minutes, until the chicken is no longer pink.
- Add the bamboo shoot and water chestnut mixture. Cook for 2 minutes, or until heated through. Stir in the toasted sesame oil.
- Remove the pan from the heat
- To serve, divide theu chicken mixture evenly onto each of the 8 lettuce leaves.
- Top with chopped green onion and cucumber. Serve immediately.
